This place looks great and I look forward to some new ideas and old solutions. I am from Iowa having been a chef for many years and still have a thorough joy of cooking, especially over coal, wood and grates, though I now am in United Methodist ministry. My first foray into, at first grilling, and later smoking, was serving "tailgaters" at Iowa Hawkeye football games. The menu: Iowa chops and half chickens.

My original training was in Southern French and Northern Italian cooking, but the grill and smoker continues to be the tool that brings fire to my cooking ideas. I just finished a mini-cookbook for my churches focused on grilling and smoking and it teaches me how little I know and how much there is to learn. Thanks for sharing this great site.

A few tips on cooking temps I could offer:


Skirt Steak, Fish filets/steaks

Medium Hot/direct

Medium Hot/Indirect
Tenderloin Roast, large shrimp

Asparagus, Sweet Peppers, Corn, Eggplant, Fennel, Mushrooms, Onions, Rib Eye, T-bone, Porterhouse, Tenderloin, Top Sirloin, Flank Steak, Top Round, Chicken Kabobs, Turkey Tenderloins, Turkey patties, Turkey kabobs, smaller whole fish, fish kabobs, scallops and small shrimp, all fruit.

Potatoes, Tri-Tip Steak, Brisket, Small Chicken, Roaster Chicken, Bone-in Breast, Legs and Quarters, Big Chicken Thighs, Drums and Wings, Whole Turkey, Bone-in or boneless Turkey Breast, Turkey Drums or Thighs, Fish above 2#,

Medium Low/Direct
Small Chicken Thighs, Drums and Wings

srmonty, Good to meat you as well. When I get off the grill tonight, I will post a recipe from Provence that benefits from grilling and smoking. Or how about a smoked jalepeno corn bread recipe?
Well, Reverend Smith, this is how I see it.

The whole family here is going to benefit from anything you post. And you will benefit from all of our posts. So, no matter where you start, and no matter where you finish we all gain. Nobody is going anywhere all too fast and this is a great place to hang out.

So don't rush, take your time and you decide what you want to treat us with.

Welcome to SMF, Rev. Glad to have you with us. Feel free to post your Smoked Jalapeno Cornbread Recipe in the Bread Forum in the "Recipes Only" Section.

We appreciate anything that comes off the grill or out of the smoker. tulsajeff (the Boss) will hopefully be adding a Grilling Section to the board shortly.

The cooler's full of cold ones in different variety, so go grab one. The last time I checked there were both alcoholic and non alcoholic types. Looking forward to that Smoked Cornbread dish. 1st smoked meatloaf, next will be Smokin' Rev's Cordon Bleu...

Just a little information for you. Smokin' Hawkeye Rev is my brother. We live a few hours apart and I directed him to this site. We both enjoy grilling, smoking, fishing, and baseball.
Good day to you Rev. Glad to have yet another Hawkeye here among us! Maybe this fall we can get together and enjoy each other's BBQ in IA City. Where do you usually tailgate? What part of the great state of Iowa are you from?
