There been a few folks that been helping me from behind the walls plus everyone else on this great forum sharing their knowledge! Just wanted to say thanks for all your help and wish I could do more for you. This is such a great family here! I know I can be a pain but thanks for hanging with me. Many Many Thanks.

I would not be where I am today as far as general meat smoking, curing and sausage making without the things I've learned from the members here at SMF.

I've pushed out some and learned a lot from sources outside of the forum, but I know how to vet said sources from what I have learned here.

I'm a bit of a recluse, and for what it might be worth I take more than I give here, and am forever grateful to the folks here who share. Unselfishness is the word that comes to mind but hey. That said, catch the cool side of the pillow and enjoy the day.

Well posted Brian. You have contributed a lot of posts. Still have have a tang in my heart for you losing Gretchen.
From a casual look this forum can appear to a good old boys (smokers) network.
Well, it is a GOS network, but the warmest and most accommodating group of people.

I agree and THANK YOU to all of you! Oh yeah great group here. Never saw you being a pain BrianGSDTexoma BrianGSDTexoma . Tell you what, I feel I was part of a really special time with bear, pops, and chef jj posting. Don't think I would I would EVER cured anything without bear's writeups or pops brine. No s*** all you are enablers! 3 smokers now, Auber, SV machine, vac sealer, all sorts of sausage mixes, binders, knives, and spices. You may have already saw it but there is NO WAY I woulda pulled this off without this group. THANK YOU.

I had different enablers that put me solidly on the path to curing with dry brines from the beginning, but I would likely still be sitting on the fence watching other people making bacon if not for someone walking me through my first couple goes with it.

Then, dang, there is sausage ....... I never in my life would have envisioned myself making sausage, yet, here I am.

I agree, a very great group of people. Have learned a ton here, from smoking, to curing, to bread making, pizza dough... yep, there's a lot.

I've taken a number of noobs through the bacon curing process via PM. Most learned and have rarely been seen again. I'll still take anyone wanting to learn through the process 'cause that's how I roll.
^ That right there. A guy who is willing to take you by the hand and teach you, even though you may leave... is admirable. A guy that watches them leave, but continues to teach, is someone I admire. Well said Doug.

This is definitely the best place to hang out with like minded folk from all over the US and beyond. I have learned so much and share what I can. I have enabled and been enabled many time over.

I have seen a few posts go south over the years but overall this is the best site I have been on with the least amount of bickering and the most amount of sharing and helping each other out.
