Juiciest Chicken Ever!

My first attempt at smoking a whole chicken went over like gangbusters!!!

First off, I am grilling with the electric Old Smokey, so this may not jive with charcoal, gas and/or smokers with vent and exhaust.

Whole Chicken was 4.32 lbs. Gave it a good homemade rub (found here: http://www.texascooking.com/recipes/dryrub.htm) and smoked it with a handful of water-soaked apple chips at 225*. It took exactly one hour to reach 180* internal. I lifted off and rested in foil for 1/2 hour.

My wife and I devoured it (mostly me). It was the juiciest chicken I have ever eaten in my life.

Ain't it great when the king rocks his castle?! Glad to hear it went good for ya, if you gotta eat chicken - juicey is the way to go. Give Old Smokey a big thumbs up when you pass him by :)
