I had a slab of Wagyu Plate Ribs from Meat N Bone and put them on my Traeger Ironwood 650.
Lumberjack Oak in hopper
A few chunks of hickory on 6 X 6 plate. Lit like charcoal, burned for about 10 minutes, blew it out for smoke.
I use whatever oak or hickory pellet I have for fuel then chunks on the plate for flavor
a pan of water.
a little rendered Wagyu fat added to butcher paper
wrapped at 170 internal temperature
pulled at 206 degrees.
rested for 1 hour at room temperature still wrapped in paper
Set TRAEGER to 200 for about 5 hours until wrapped at 165 internal temp
Bumped temp to 250 until internal temp hit 206
