Individual Tomato Pie....

We are getting a bumper crop of tomatos now. We planted Plum and Early Girls.


We started out with BLT's - I love a good BLT.
I usually make Tomato pie when the tomatos come in, and this year I wanted to try something a little different.
Diced up some tomatos...and let them drain.


Got out my mini muffin tins and created a template for the dough.


This looks pretty good...




Cooked and cooled...



Filling
Equal parts mayo and your favorite cheese.
Tomatos
Fresh Basil


Into a 350 degree oven till everything is melted and bubbly.




The original recipe calls for this to be made in a standard pie plate, and to layer the tomatos and basil and top off with the mayo/cheese mixture.
I wanted to see how these would do as an appetizer and I think they work. The only thing that would make these better????
