Right now I have a 10# picnic, 9# butt, 4# butt, 2 spares, and 2 BB...... All out of beef at the moment.

I am planing a small party for about 20 or so in late June. That will use up the two larger roasts. I was thinking about 4 spares also. I only have a small GOSM with two racks, so I will have a challenge smoking this much.
Any thoughts on order of cooking?
Should I go with Ribs a day before or do the butts first and cooler for 6 hours while the ribs go? I may have trouble fitting 4 racks at a time.

What you can do is when you get to the point where smoke is no longer penetrating or when you get to the foiling step, start using your oven set at whatever temp you were smoking at. That's how I do it anyways!

Do butts an picnics the weekend before, pull an vac bag. Do the ribs day of, preferably ta finish just a bit before ya need em.

Freeze the pork, now all ya gotta do is put on a big pan a water, bring it upta say 200° an put the bags a pork in until they warm up ta over 140° preferable ta a 160°. Then yer porks ready ta go to. We always got frozen pulled pork on hand.
