In need of a proven Venison Summer Sausage/hot stix recipe.

    Hey guys, I'm sure the info is here somewhere but can not find it for the life of me.

    I typically have my sausage made but w/ the new Smoke Hollow, I'm thinking of tackling this myself. Problem I have is a limited venison so I want to get it right the first time. Any help would be great......

    your best bet would be to buy a sausage kit they make 12-25 pounds depends on which kit you buy there are several on the market they come with everything you need casings seasoning and directions hi mountian makes a kit for summer sausage i think butcher packer sells a kit for snack stix look on the web there are a lot out there i have tried out the hi mountian summer sausage kit it is good go to these web sites you will find what you need i am sure and having a limited supply of meat i think you will be happy with the results if you have any other questions just let me know i will be glad to help
