I'll never understand "The Brisket"

I have cooked brisket before with pretty good results and it usually takes about 10-12 hours for a 7-10 pounder. Well I wanted to make one for the forth but I didn't want to be cooking all day so I couldn't enjoy the fireworks, so I figured I would start it today and enjoy it tomorrow.

Well I put it on the MES at 7AM at 250 degrees. When it hit 160 at 10AM, I wrapped with beef broth. It hit 197 at noon so I took it off and let it rest.

I thought something must be wrong, never had one cook in 5 hours ?????

Well sliced off a piece and it was perfect.

I plan on refrigerating it tonight and reheating in the smoker for dinner tomorrow while I am cooking a pork butt.

I posted a few weeks back that I had a brisket get done in around 6 or 7 hours.  I didn't even check the IT until after 4 hours and was shocked at where it was.  Just never quite know I guess.  I had fully expected it to take a good 10 hours at least but as many have said, they have a mind of their own.
 
Mine just hit 157 after over 9 hours. Can't believe this brinkmann has gone 10 hours on a load of bbk. Still at 225 on the grate. [emoji]129300[/emoji]

Are you sure about the temp or are you using a stock therm?
