I need help with a brisket

i made a brisket in a pellet grill with apple pellets. I used salt pepper garlic powder and paprika for rub. It tastes like something other than brisket. It has been cut already and u am interested in knowing how I can fix this or it will just be a waste. HELP please.
 
There is really no flavor but a few people that tasted it says it tastes somewhat like ribs. I think it is ok just really no flavor
 
Maybe not enough seasoning? How much salt and pepper did you use?
 
Apple is a pretty mild smoke for brisket. A stronger wood like hickory or oak would have given a more pronounced smoke flavor. Cube it up and make it into burnt ends maybe???

Could have been just a lousy brisket to begin with. They often vary greatly from one to the next.
I would eliminate the paprika for sure and go easy on onion and garlic. I use only salt and pepper on mine, but some prefer the SPOG seasonings.
 
At this point it's one of three possibilities. Turn into brun ends, chop up and make a big batch of chili, or the dog is really going to love you! Next time, no paprika. I stopped using garlic and onion powder because the flavor profile it was leaving. For me these days, it's straight Texas style brisket. 50-50 black pepper & kosher salt smoked with a mixture of hickory and mesquite pellets.

I made beef ribs a few years back with way too much salt and pepper, no other spices.

Tasted like pastrami :emoji_neutral_face:
 
Thanks to all of the advice you guys gave me. This is the first time using a pellet grill and the first time my brisket has ever tasted bad. I always have good brisket. Well it looks like I stick to a real smoker and not a pellet huh. Lol. You live and learn. Thanks again

You can always throw it in a crock pot or a pan for the oven with more seasoning and some BBQ sauce and let it cook and simmer until it is good enough to shred and eat it as chopped bbq brisket. Many a brisket can be saved this way so you are not out of luck. I would suggest adding Salt, Pepper, Onion, and Garlic seasoning for more flavor. Cut out the Paprika, that is more of a pork flavor anyhow UNLESS you are also adding chili powder and a little cumin but at that point you are going for Mexican or Tex-Mex flavors rather than bbq flavors.

Obviously that's your decision to make but know that great brisket can and does get made by pellet smokers all the time.

I agree, apple is too light for beef unless mixed with a harder wood. A year back I parked my MB Dual Fuel that was used to burn sticks and lump and bought a Grilla Silverbac, the smoke flavor is lighter but still good and I've now switched to hickory or mesquite pellets and mix in some comp or fruit wood pellets pending whats on the grill. I'm about to run two briskets the weekend after Christmas and as much as I liked my MB, I like putting the briskets on about 10pm and going to sleep. I'll set a temp alarm for the grill and check them when I make that 3 or 4am restroom break, then back to bed.
