I was not thinking when I was weighing my spice and salt out and mixed it with the NFDM and mixed into the cubed meat BEFORE grinding. How bad is it going to be…? I’m wondering if it’s going to gum up my grinder or impact the outcome of the sausage in any way. I usually do a double coarse grind. It’s my annual batch of venison kielbasa and about 25 lbs in total.
 
Milk powder is not an overly strong binder. I'm thinking you should be fine.
Now don't repeat the same with phosphates.

Are you grinding tonight or giving a time out in the fridge until tomorrow?

Will be a little sticky and a PITA to feed in the grinder, but as mentioned, you can still grind it. 25#...no problem. I one made this mistake with 150# of all pork sausage....you learn to never make that mistake again with that much meat.
