Having the friday after Thanksgiving off, and the she beast being pre-occupied with Black Friday, left me unsupervised. It was the perfect opportunity. Smoked up a Butt Ham and some Buck Board Bacon. The hardest part was waiting the 3 days for the Ham to rest and mellow. I was waiting for a delivery of vac seal bags before I cut into it so that turned into 6 days. I finally started cutting into it tonight. I loved it but thought it could be a tad sweeter. The She Beast thought it was ok. but she's not a fan of cold ham. At Her suggestion I cut a few steaks and heated them in a skillet for our dinner. That changed her mind ( no small feat ). By Proclamation from She Who Must Be Obeyed, I am not allowed to modify the recipe in the least. She went from rolling her eyes at the mere mention of the ham I was making, to drooling like Pavlov's dog, just that fast. Neither of us can remember ever having a ham so tender. Her words were " Best ham I've ever had".
The Buck Board Bacon will have to wait til tomorrow night.

This has been said in Dave's post , mine , and others , because it is that good .

I am not allowed to modify the recipe in the least.
Again , been said , and I don't think you can improve on the original . I was doing 1 a month for awhile . Trimming the coppa out of a butt when making sausage . You'll be making them alot now .

I was skepticle. I knew many had said "Best ham I ever had" but I am a bit passionate about ham. I don't buy the most popular ham here because I find it downright bland. I'm in it for the flavor and I seriously think it's the best seller because it's the cheapest. My former favorite is too pricey.
This is a game changer. I now have a new favorite.
