I Got To Smoke Today

    Finally got to smoke today, everybody has posted views from their smoking area but this is a view of my from the house, shop and smoker are behind the post.

    Here is a closer view with one of the taste testers, Booger Man, At least when I tell little kids theres a Booger Man in my back yard I'm tellin the truth.


    Yes Ba-Loko there is a beer fridge complete with the infamous "Stolen Brisket" and some home made pickled eggs. I know it's Miller Lite but if I drank a Bud I would have to drink six Millers to hold it down[​IMG]

    I put on a 3.6lb Butt, some ribs for the wife and two plain Fattys


    three hours into the smoke the ribs are foiled


    It's getting late and the taste testers are getting impatient, that's Little Man with Booger Man

    Well it's 8pm and the Butt has been stalled for a long time, I put it on at 10:30am and it's still only at 165° and it wasn't even 4lbs and yes I put a different probe in it to check it. Going back to check on it now, I'll let you know how it goes

    Lookin real good Blackhawk....a beer fridge stocked like that is awesome ...no matter what kinda beer it is , uhhhhhhh except maybe labatt's blue [​IMG] ...thanks for the pics [​IMG]

    Well I pulled the butt out of the smoker and put it in the oven at 8:30 to finish it, perfect example of why you go by temp instead of time. I put it on at 10:30 this morning and it was a 3.6lb Butt, when I put it in the oven at 8:30 it was only at 172°, that's 10hrs[​IMG]

    I always look for "Ex's" when I make it cross the border. 2nd would be Goldens. I like the Labatt Extra Stock, and the Molson Brador as well, full flavor and a whollop alright! Sleeman's Cream is a nice change when I can find it... :{)

    When I'm having a pub night, I like Molson's Rickard's Red on draught. In the heat of summer I like Lakeport's Brava a Mexican style lager most like Sol or Coronna ... mmmm beer! [​IMG]

    I agree, [​IMG] Hey Blackhawk, how do you make pickled eggs? I haven't had them for years but I sure did like them. I have a reciepe for pickled turkey gizzards but haven't tried it yet Terry

    Wow, Blackhawk. Great pictures. It looks like you've got a great place to enjoy a whole day of smoking while putterin' around the shop.

    Next time you get out this way, I'll have Miller Light on hand for ya. I don't want you to get sick, ya know.[​IMG][​IMG]

    If you look at the picture looking intothe shop in the back left hand corner of the shop you will see a recliner, but the dogs own that[​IMG] but I do have cable run down there for the TV. It was a great day yesterday, cooler weather, watchin football, drinking beer and smokin. "Life is Good" [​IMG]

    Yes sir, all of what you say is true. Thanks for the pickled egg site. I wonder how it would be with some liquid smoke and tabasco added? [​IMG] Terry

    No this needs to be at the head of everybody's list. It's Vietnamese Nouc Mam. They used to carry it with them when we were relocating them and if a clay pot of it broke in your bird you had to land, it took weeks to get the smell out. Basicaly it is a sauce made with fermented fish heads and is the worst thing I have ever smelled but then again Terry might like it

    I use http://s14.photobucket.com/ and when I upload them there I resize them to forum size which is 640X480 then I copy the Direct Link and post it here by clicking on the yellow mountain icon on the top of the page that says insert URL of your image and paste the link there. Photobucket is free

    While I didn't serve in Nam, I have eaten some to the food you described.....kimchee and such.....if you have sinus problems it's the best thing.
