i didn't smoke it but... chix & dumplings

    is that time of the year for comfort meals like chili & chix & dumps so i made some chix & dumps. here's my recipe.

    4 chix leg 1/4s boiled & stripped(watch the bones)
    4 tbsp fiesta fajita spice
    4 cloves(not bulbs) smoked garlic mashed
    1/4 cup smoked onion (i use yellows)
    1 stalk celery finely chopped or diced
    4 cups bisquick 1 cup milk.

    bring chix & veggies to a boil for a couple hours then simmer for a couple more(until the water is yellow w/ oil pools)
    strip & shred the chix adding back to the broth
    bring back to a boil adding in thumb sized globs of the dumpling dough.
    drop down to a simmer & stir once for 15-20 mins
    down to low for an hour
    let sit covered for @ least 3 hrs(to get the chix flavor into the dumplings)
    this is an extra- ladle into a bowl of skin on mashed garlic taters.
    even better the next day
    enjoy.

    I know what ya mean about that time of year for comfort food. I was just thinking about simmering a pot roast on the stove all afternoon, while watching old Clint Eastwood westerns ..... one ofter another. I get a kick out of the kids popping in and out of the house all day and saying how good it smells.

    I bet some smoked chix would be good in that dumplin recipe .... thanks, I may try it on the next dreary weekend!

    It was at this point that I thought you could move it to a smoker. [​IMG][​IMG] , you know how I don't like anything quite so much as when its smoked. [​IMG]

    well i would have smoked the chix but as the propane tank for the fireplace is empty until delivery monday and we needed some heat(and aroma for the house),and i was out trrimming the maples today.... i just threw some maple & a big chunk of hickory stump i chop off of in the old wood stove on the porch- grabbed a cervesa & steamed up my galley. yes- it do work well w/ smoked chix- very well... oh yeah btw- i'm still hacking up the tbs from summersville last wkend.lol
