Hi guys,

I just retired from higher education at Georgia Southern University and have moved to San Diego.  Most of my time in the last few months has been spent getting the house fixed up, gardening and doing "honey do's."  It is now time to get smoking again.  I have had a little experience, mainly with my Weber, which is great.  I got a Bradley 6 rack digital about a year ago and have smoked with it 3-4 times.  I have been following Jeff's e-mails for some time and am really excited about being part of this group.  Everything I have read is really good, even when there is disagreement.  I be a smoking! Thanks, yep I should have retired 6 years ago.  It is great to do what I want to do, which is smoking and gardening.  By the way, I sure had a lot of great smoked pork and chicken in Georgia.  Southerners truly know how to smoke and grill that stuff.

I am in Vista.  Small world.  I just finished smoking a brisket today.  Got an interesting twist on doing it from a friend in Texas.  Just sitting down to dinner, so I will give a report tomorrow.  It sure looks and smells wonderful.  Gary

First off welcome Gary to SMF. You will learn to like this place for there are allot of really good folks here that would do help you with anything to do with smoking. I would also recommend that you sign up for the E-course it's free and it will give you the basics of smoking and some good techniques also. Thanks all for the warm welcome.   I just got the thread for posting pictures, so now I will join photobucket and try to send some pics the next time I smoke something.  One thing that worked well this weekend was smoking the brisket.  Per a suggestion from Texas, I cooked it in a dutch oven for about 2 hours.  It was filled with about 1/3 beef broth and a tea of bay leaves.  I then smoked it for about 5-6 hours at 190-200 degrees.  It came out fantastic, moist, tender, and smoky.  Life is good.
