Thought I'd stop by and introduce myself real quick.
The name is Pat but have been called Quigs by many, since my little league days. I live in the very northern tip of the Ozark Mountain region in Missouri, near St. Louis with my wonderful wife and our awesome 4 year old son.
I actually ran across this forum back on Thanksgiving Day this past year. I was snooping around to see how everyone else was smoking their birds. I think I had a question besides my curiosity however, I don't recall what it was but I reckon it was answered by browsing some posts.
I learned my love for smoked meats at a very early age from my Dad. Don't tell him, but I have long passed his ability on the smoker! By no means am I an expert though. I'm real good with the simple things! Still learning alot and just now getting to the point where I want to try some harder cuts.
I'm cooking on a New Braunfels grill with an offset firebox. It's about 10 or so years old and it's starting to wear out. I've looked at new pits but have yet to find anything I really like, so I'm thinking my next smoker will have to be a custom built project (that should be fun, I'm a woodworker, not a metal worker!).
I've been down for a couple months due to the cold weather and a health issue but you'll find me in the pork section today! I stopped by the butcher shop this morning and grabbed up two racks of spare ribs. I gotta get that smoker going or I'm gonna go into fits! Only problem...I've never smoked ribs before!
Anyhoo, that's a little about me. Hoping to learn lots here and expand my limited knowledge of the smoke!
