Hello SMF Rollcall. I have been an unregister "Guest" (lurker) for awhile and thought I would introduce myself so that I could thank you all for some great information, jokes and a feeling of sincere commeraderie in this fraternity of Smoke!
Have I done good so far?
Always on the look out for tips, advice and all around good info. I was trollin' the Beef Forum and came across Ultamag's "Trimming Brisket" thread from 10/28/06. The Virtual Brisket is a great tool and the link "Brisket Selection and Preperation" is exceptional, especially for those with little experience. Newcommers to the Smoke should study it as well as Jeff's 5 Day Intro..
Thanks to Jeff for SMF, Ultramag and all the rest of you for helpful thoughts and information.

Got the 13# Packer in the fridge, all trimmed, rubbed , wrapped and ready to go in the NB offset tonight. Will take some pics then try to figure out how to post them. This brisket is for a friend but the Fatty is all mine.
