1 cn (20 oz) crushed pineapple undrained (you can use a fresh one if you want) save and dry the rind to use on the smoker later..
1 cn (15 oz) black-eyed peas drained and rinsed
1/2 cp finely chopped red onion
1/3 cp finely chopped red sweet pepper
1/4 cp chopped fresh parsley
2 fresh jalapeno peppers seeded and finely chopped. you can add a hab or scott finely chopped to bring heat up.
1/2 tsp course ground salt
1/4 tsp cumin

in sauce pan combine all things above. heat over med heat 5 mins or untill heated thru. stirring occasionaly..remove from heat cover to keep warm.

put on smoked pork, chixs, iguanas, buffalo, and by all means stix a chip in and try..
 
Sounds good, will have to put this in the "To Do". May even have to put a little heat in there, sweet heat is a favorite
