Honey BBQ sticks

those look great. i have been trying to get the seasoning kit from that place ..not allowing me yet to post or get the recipe..im new to this place also. i smoke a great rib...and people tell me my deer jerky is the best. but i love snack sticks, summer sausage..how  can i order that seasoning???i saw the pork fat to deer ratio,and the post where you added white pepper and black. im guessing fine ground.?how many oz. per pound. i love HOT SPICY   stuff....i have a grinder, slicer, stuffer, looking for hot sweet recipes..your looks like the best ive seen yet.. help a new guy please .mike

Go to the Owensbbq.com site and click on the sausage seasonings tab on the left, scroll down and you will see the honey bbq mix. Mine aren't super hot just a little heat. All the stuff you read on here is mostly personal preference as to what ingredients people like or don't like. My suggestion would be is to start with small batches until you find what you like, then increase batch size. There's alot of good info on here and most folks are more than willing to help. sorry  but no im not kidding. i followed your post on here to brethren forms. it would not give me any info. nor any spices for sale , or any recipe ..until im guessing my membership came through.[ might take a few days i think it said]. i searched for hours  no luck. but the link you sent me showed me what i was looking for. thank you for that.  mike66

After your original post, I ordered some mix.  It arrived in just a few days.  Like they say on their website, it's a LOT of mix for 12.5 lbs.

I used 80/20 beef for these and followed the instructions to the T.

I started these at 120 for an hour then went to 150 for an hour and on up to 180s.  I used hickory in my AMNPS.

They turned out great.  Really sweet with some nice BBQ flavor.  Almost sticky-sweet, but overall, they're good.  I'd definitely do this mix again.  I didn't think they needed any doctoring at all.


You might see a black spot on a couple of the sticks.  This is where my elbow vent on my MES dripped back down onto the sticks.  Not very tasty.  It's about 20 in Omaha today.

Those look great!! I added what I did for a little heat for the finish. It really compliments the sweet well!

man they look good... I make my own honey bbq spice mix & use cheese curds in them as the don't melt to much & go runnie during the low temp smoking! This is a pic from 2 months ago doing moose (no pork mix) & the spices & curds ... juicy & tasty... not dry.

   Those snack sticks look like they would be fun to make. I have not attempted to smoke any meat with casings involved yet.

Did your casings come with the seasoning kit or do you have a different source for buying your casings?

    I will look into the snack stick/sausage making info here at the forums.
