My friends and I have built 3 sausage stuffers just like this one out of spare # 32 grinder parts and other stainless parts we could find like the 4" stainless steel milk line I found will hold 6 #s I use it mostly for making snack sticks because the 19mm tube they give you with grinders simply will not work without turning the meat into mush, Made a wood frame for it clamp it to the table and away you go.

I'm guessing that the big nut on the crank end is fixed, and the crank is attached to a length of threaded rod which in turn pushes a plunger? Show the innards if you get a chance. Some great creativity and craftsmanship there.

that looks cool i have seen one kind of like it other then it had a place on top tp put a bag full of ice to keep it cold that is very imporent so that the fat gets mixed in good
 
I took a plastic cutting board for the plunger and a piece of threaded rod 3/4", the handel is off #32 meat grinder and the big nut to hold the tubes in are from grinder also
