Decided to give center cut boneless pork chops a try on my Brinkmann Electric.
Started out with an easy brine
- Half gallon of water
- 1/3 cup of salt
- 1/3 cup of sugar
Let them sit in it overnight.
Next morning I rinsed them off well and dried them off. Followed by a quick brush of vegetable oil and a homemade dry rub and a healthy coat of bacon!
Put them on the smoker at 225 for just over an hour (Internal Temp of 145) with cherry wood.
Pulled them and put them under the broiler for 5 minutes to crisp up the bacon. They came out juicy with a great flavor. One of my best smokes yet!
