Got this 22 lbs Black Angus chuck roll for $4.95/lbs.

Threw it into my dry ager at 34 F at 82 percent humidity.

Pulled it out today.

Chopped it up with a breaking and boning knife.

I was able to get seven Denver steaks, two chuck eye steaks, one sierra steak, stew meat for burgers, and a chuck roast.

Total loss in weight was 6 lbs.

45 day dry aged steaks always cooked faster than I expect.... Here's one of the Denver's I cut from the chuck roll. I just seared on cast iron.... I was shooting for 128, but hit 135.

The lobster was some frozen stuff I grabbed from the commissary... Also made some chimichurri... Which tastes surprisingly good on lobster.

Nice , I can appreciate since one day a week I cut for a custom meat small business beef, pork, You name it
walking in on hoof to walking out in vac packaging. Its my thing! Lol
