I cold smoked Kosher salt with the 12 inch tube. Full tube burns for about 4 hours. seems to be ok, lots of good smoke flavor.
Put salt in a Rubbermaid bowl, mix the salt every hour.
Same with cheese. Cut the blocks into 1 inch thick chunks, pack in vacuum seal bags.
