I am in the Louisville Metro area. New here to the group and just wanted to introduce myself. My name is James, some people call me Jimmy. I am a novice smoker (still making beginner mistakes) I cook on a Oklahoma Joe Highland. My first smoker was a vertical Weber knock off.
I tend to smoke less now a day since I really watch what I eat. However, I love to put on 4 or 5 whole birds. Smoke'em bag, tag and freeze for meals later in the week.
Right now I want to take another solid crack at smoking a Brisket. Last year I found Costco had Prime cuts available and wanted to try one of those over the middle cut choice I have been using.
I am around from time to time and always looking for good pointers.
