Hello everyone. I'm a long time charcoal griller and have dabbled in smoking with indirect heat and soaked wood chips in a old pan on the coals. The results have actually been pretty good, but it is tedious and I want to do it better. I also make my own sausages, and I want the ability to cold smoke cure them before freezing. I also want to cold smoke fish and cheese. I have already begun my project of a refrigerator conversion, and I will post some details about it in that specific forum. This site has been a wealth of information and reading through old posts and seeing other builds has been a great help in making my decisions.
