Been reading through, and I have to say how impressed I am with the knowledge and courtesy on this forum. Thanks in advance for all you folks will teach me!

I've dabbled with smoking a few standing ribs, a couple turkeys and of course pork ribs and butts. All store bought rubs and sauces. Never really cared about the what for of the whole affair till now. Pretty inconsistent results too.

Really looking forward to trying my hand at sausage making and curing and smoking my own meats.

You have hit the nail on the head. Consistency is what smoking is all about. Once you have mastered consistency you enter the realm of the thin blue smoke guru. Friends and Relatives will bow in your presence. Little children will hold you in awe and most importantly you will be eating some mighty fine Q.

PS, Store bought rubs are ok, there are some good ones out there. But you are paying too much for them. It is mondo easy to make your own, there are plenty of good rub recipes on site. Plus you cannot go wrong with Jeff's Rub one of my favorites.
All you do is mix dry ingredients, easy as pie..... heck its way easier than pie.

Howdy Phil! Welcome to SMF. I've only been a member for a few weeks, though I spent my fair share of time lurking in the shadows too!

Try checking out some rub recipies. You'll save a fortune in the long run, and to me, that's half the fun. Tweaking with a pinch of this, a dash of that.... You'll get a real sense of accomplishment when family begs you for a rub recipe that you've tweaked...
