So, I've been stalking the forums for at least a couple years now. I visit from time to time to view the smoker p0rn and steal recipes. I finally decided to join after seeing the beautiful smoker build that "atcnick" completed. What a sight, especially for a man without plans! I was impressed, so had to join and congratulate him.

I am fairly new to smoking. Been doing it a couple years in my Masterbuilt 30 in. Vertical Digital Electric Smoker. Started with simple things like potatoes and other veggies, then on to salmon and trout. I once did some jerky in there and didn't like how smokey it was. I guess being so thin, the smoke just penetrates right through? It was like eating meaty charcoal sticks. Hated it. Any advice on that?

I would love to branch out in to more items to smoke, but for now, just enjoying what I've been doing.

I really like trout with pecan wood smoke.

Welcome aboard Matt!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are lots of friendly and knowledgeable folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.
