I'm originally from Allentown PA, I spent a few years in Sheridan Wyoming but now live in Raleigh NC. I'm new to the smoking world (3 months).I enjoy all types of cooking and I've been making and stuffing my own fresh sausage for many years which now I will be able to expand on and start making smoked sausage as well. I'm using a Masterbuilt XL propane smoker with a few additions like a cast iron wood pan and I use large disposable foil pans as my water pan along with a Redi Chek Maverick wireless thermometer set. I've been smoking every weekend since I got the smoker and have had some excellent results, often due to advice I got from this website. 2 of the things I've smoked were some homemade beef sticks and salmon fillets, I shared these with some co-workers who thought I should seriously consider going into the business myself. I've never been a member of a forum before,I'm looking forward to building some relationships around the love of smoking meat. Kicker
