Thank you for his forum.

I'm new to bbqing/smoking/grilling and this is my first post. I received a Char-Griller Outlaw with offset smoker/firebox for my birthday this Jan 1.

My first go was after reading The Great American Barbecue & Grilling Manual by Smoky Hale. I prepared and BBQ'd two racks of St. Louis cut spare ribs following the instructions in the book. Made a baste and finishing sauce from the same. Turned out great! No heartburn, indigestion, etc.

I've been messing around most every weekend since with fire and meat. I'll be grilling Dr. Pepper ribs and fish tacos this coming weekend.

This and more from a former cereal and stare at the open refrigerator waiting for something to jump into my mouth guy!

Welcome to the forum... this place is awesome. I have the little brother of your smoker - the smokin' pro 800. If you have not made the mods to yours yet I highly recomend them. Just remember the only dumb question is the one you don't ask... lol.
 
Welcome to the forum Tomiro. And I have the "Big Brother" of that model, so yes, visit the charcoal grill area & make any modifications necessary to keep that puppy up & running to your satisfaction. Enjoy your stay here. Plenty of information to be had.
 
Welcome Aboard. I used to live in Mission Viejo, not too far from the lake. Many memorable days trout and bass fishing. Make sure you post some photos of your results. :-)

You have gone and done it now! Stumbled into a whole nest of grazed smokers. Next thing you know you will be getting funny looks from your family while you snap pics of the excellent Q you just smoked.
