Hello from Fargo North Dakota, I was a cook (prep, line, and grill) throughout high school and college so I have some cooking experience.  I got a cheopo smoker from home depot for Christmas and got hooked. I just bought a MES because I wanted the insulation to smoke year round here in the cold weather. I have been cruising around on this sight and figured I would jump in on the fun. I look forward to learning more and more as I sharpen my skills. Should be fun.
 
This was my first smoke in the MES, I had a pork butt in there as well. I finished the Chicken up on the grill just to char the skin a bit. The ABT's were perfect.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
