...to my wife. Her birthday was actually Sept. 22, but with everything that's been going on, we haven't had time to celebrate. Anyway, I invited the whole zoo and a couple more for a belated celebration. I smoked a whole boneless ribeye and made cheesy scalloped potatoes and a salad. Only 1 pic...

Everyone had a good time, Brian. There was around 30 here and some of those still don't have power so it was a chance to help ease the pain a little...

I appreciate that Jim. With the hurricane and the aftermath, it's been challenging around here for quite a few so I'm thankful to have the opportunity to celebrate...

Interesting side note, Cat 5 Hurricane Hugo tore through here the night of her birthday in 1989. I told her we're going to quit celebrating her birthday if a hurricane has to come along with it...🤣

Thanks John! As for the scalloped potatoes, I followed this recipe. Since I was using 10 lbs. of potatoes, I multiplied the recipe by 4 or so. I subbed Gruyere for the Raclette. I baked this for around 45 minutes uncovered, but the cheese on top started to brown, so I covered it after about 25 minutes. Then uncovered again after the potatoes got tender.

I sliced the potatoes on a mandolin about ⅛" thick. This big of a recipe can take awhile to cook to get the potatoes tender, but the cheese will get too brown, so cooking longer in the skillet will help. Just be careful because the mixture can burn in the skillet. Using this amount of potatoes, it took me 2 batches in the skillet to cook them all. They were then transferred to the aluminum pan.
