Thought I'd post the dual functions of the incredible UDS. Here I have a few London Broils I soaked in some
crazy mixture for a few hours and onto the grill. It quickly went to 500* when I dropped the lid. Seared nicely
and once I let it rest for a bit it was very juicy and tender. I was a hungry man and forgot the pre-chow pics, next time. Enjoy.

Looks like a great start how long did the UDS stay that hot?

Well I posted after the actual grillin around 6:30 and I just went out and checked the temp now and is still over 200* on 1 chimney of blue label at 9:30. I also had my access door open all this time which is my old door fom my ECB. I would say it's very effecient but I ain't gonna paint it green. [IMG]

Is this a different coal basket than what you use in normal UDS mode. Looks like you cut the bottom out of something which retains the coals on the side, and this sits on another grate upon another rack. n00b question, I have never checked the chamber temp of my charcoal grills in the you use this set up without the lid to do traditional grilling? Thinking if I cut the bottom out of my ECB water pan, or deceased dog's stainless water dish I will create this fire ring?

    Good stuff[IMG]

Yep, a UDS with a rack in the middle gives you some great versatility. [IMG]

Here's a shot of some New Yorks I grilled awhile back.

The U in UDS should stand for Ultimate. [IMG]

My fire ring is a piece of stainless I had a friend make for me and I bolted it on 2 weber coal grates turned 90 degrees. I used 3" stainless bolts to get it off the bottom when in smoking mode. I also added fender washers at the bottom of the bolts so I can set it on the grate for grilling without falling through.
