Hi all, I recently started smoking on my new Brinkman (Christmas pressie from myself) and am really enjoying it. Need to do a few mods but on my 3rd cook, got over 5 hours with the minion method without topping up. Sat at around 260 so a bit hot, hence the mods needed. It was freezing outside too! Not bad for the ECB! Looking forward to posting and learning from all you passionate folk out there.

Hello and Welcome to our addiction.  From the title; are you in the U.K.?  Many good folks here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Check out Jeff’s 5 day smoking E-Course ( link below ) that will help you get started.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Thanks Danny! Appreciate all you said, and yes, I'm in the UK and it's mid winter...
Will definitely look at the ecourse and hope to be doing another smoke next week, what better to do on a day off I say?! Will post some details (with photos) then. Had positive success with a couple of chickens but struggled a bit with 7.5lbs of shoulder. 8 hrs wasn't enough but people wanted to eat... In future, we eat when the food is done, it is worth the wait!

Glad you joined the group. The search bar at the top of any page is your best friend.
