Hi all Andy here from NC. Been looking at this site awhile and find it great. I have been smoking for 35 plus years and have just recently started curing meats.(Wow what i have been missing). I have an older uds,a homemade offset stick burner smoker/grill. I just bought a smokin tex electric unit for convince(my 89 year old maw-n-law just moved in and takes some time away from smoke watch and worth every minute). Should have bought it a long time ago as i have fallen in love with the ease of it  and it does a GREAT job. I am retired from the equine industry. Look forward to getting to know everyone and getting great recipes. Thanks all.
