Welcome Tod, you found the best place on the net to learn how to smoke and cure meats. More info on here than you can handle. Lots of great people here to lend a hand and provide tips and know-how. You have a great smoker there, the MES. I suggest looking into the electric smoker thread and read up there a bit. Its a very popular smoker and the guys and gals in the electric smoker area will have you up and running in no time

Hi Todd, and welcome to the SMF. Congrats on the new MES, it's all good my friend.

So, where in Washington do you call home? We're getting quite a gathering both on the wet side and dry side of the Evergreen State. Welcome aboard. Your experience with salmon will be of a great help. Always seems to be a request for "how do you.........salmon?"
