Goose Grinding Day

Have more goose to grind for some buddys. Thinking on maybe SS or Trail Bologna. Grinding goose breast, this is 9 lbs after trim and artery removal.

They wanted pork butt cut in this time so i ground 6 lbs of butt.

Mixed the meats together real good.

I did not mix in any cure or seasonings yet. Cover and fridge for a few hours until i decide on what i'm going to make.

Wrapped 4 times with clear wrap, in fridge now.

Doing 2, 5 lb batches.

Cure mixed with 3/4 cup water.

All done. Made a marker so i know which stick the GP chubs are. Hey you say?  Why you got a small chub? Thats another story

10 mins in and climbing to 130* for 1 hour/no smoke. Going to turn dial to 140* and hit with hickory smoke.

We have a bunch of locals around here, but the travelers don't usually land much in this area, unless it's real foggy.

My kid has to chase them out of his pond, because his Newfie is getting old, and if he goes in the pond after the geese, his hair absorbs so much water that he gets too heavy, and needs help getting out!

No actually my son is friends with a local guide and them guys just keep knocking em down. I get the breasts for whatever i wanna do with em. They keep me busy.

Chubs are smoking now.

Nepas, do you use a metal detector before you grind? Looks like you are pretty experienced at grinding geese but I would just caution you to be very careful. I have ruined two cheaper grinders by hitting steel pellets. I now have the 1hp cabelas grinder and I really don't want to break that one. So I invested in a good metal detector, I still have 60lbs of geese in the freezer that I just cant bring myself to grind yet. Those nasty birds sure do make good sausage though. Your SS looks really good, sweet smoker by the way!

Yeah i use a Little Wizard for locating shot. Been metal detecting for 30 years, just cant bring myself to get one of my high end detectors all bloody.

My Cabelas grinder did find a pellet once, i cought it just as i heard it hit the blade and stuck a bowl under it and got it all. Had to take down the auger and clean but no biggie. Didnt find any shot in this batch. Got 100 lbs yet frozen to do.

These chubs have the gun powder seasoning mixed in with the SS mix.

I cut off both ends of the chubs before vac sealing so the sharp dry casing ends dont puncture the bags. Now ready for the hunting crew for the game on sunday.
