Okay, I have ready on too many posts that you can put rubs and whatnot under the skin. HOW DO YOU GET UNDER THE SKIN. I smoked a chicken the other day but just wasn't sure how to do it without breaking the skin.
ianrip, VERY CAREFULLY lift up the flap of skin located at the neck, slip a couple of fingers under the skin and seperate the thin membrane that holds the skin to the breast meat. If you do this with a bird that has set at room temp for 15-20 minutes or so, the task will be easier.
