getting hold of curing salt in the uk

hi,
i have just bought a book called 'great sausage recipes and meat curing' by rytek kutas, it looks really good and i cant wait to use it, the only trouble i have is finding a supplier of insta cure #1 and #2 in the uk, as all recipes in book that need a cure call for it. if anyone could let me know where i could get it in the uk or if they know of a substitute for it and if so what quantities to use. i looked into buying it from the us but the site i looked at wanted $100 for delivery for 2lb of the stuff. i hope you can help, cheers.

Check out http://www.sausagemaking.org/ they have every thing you need.
Although not as fun as it is here, their forum is a good place for sausage info and they speak your language. :) You know what I mean, rusk, rashers, Kg's that sort of stuff. but it appears to be down at the moment.

yep sausagemaking.org are the bods to go with.
2kg cure salt works out $15 delivered.
And given that this is a fairly high concentrate (15g per kilo) usage. It's a seriously good deal.

Personally I wouldn't (and don't) use uk based forums - you learn more round the us ones :-). let's face it uk sausage is rank. It's salty, fatty and has way too much 'padding' in it.

Ryteks book is very good - I've read it cover to cover and a lot of very good info in there - but again I pretty much always modify his sausage recipes before makiing.

Anyway anything you want to know don't hesitate to pm me either here or on smoked-meat.com (can I say that here ? lol)
