gettin the heat down on my GOSM???

what is the best and safest way to get the temp in my GOSM down to smoke jerky? I have read some threads about installing a needle valve in the gas line but I also hear this is not the safest way to go. any other ideas?

P.S pics help if you have some of your temp mod.
 
I smoke my jerky between 140*-180*. My GOSM can get down that low & hold steady temps.

fwiw, when I smoke cheese, I use 3-4 chunks of charcoal in a 9x9 cake pan (replacing the chip box) & don't use gas. I can hold 70* pretty well with that. Maybe try a few more charcoal chunks & forgo using gas at all.
 
I'm not sure which GOSM model you have, but try smoking jerky early in the morning or later in the day if the smoker is in direct sunlight. Also try keeping the top vent wide open, lower vents closed to factory settings, and use the top rack area which is usually the coolest area in the cabinet. Good luck my friend.
 
This is for a GOSM big block. Try testing with a therm at different rack/grill levels. Try closing all the vents and see how much hotter the top gets. It's like turning on your car heater with all the windows closed. All my therms were calibrated before installation.
