german potato salad

    i found this to be a nice side dish,,,,you can smoke the potatos for more taste if it is needed...................5 lbs potatoes (baking potatoes are NOT recommended, as they are too flaky) 1/2 cup diced smoked bacon 1/2 cup vegetable oil 3 tablespoons white vinegar 1 teaspoon sugar 1 teaspoon sea salt 1/4 teaspoon fresh ground pepper 3/4 cup sliced green onions 1/4 cup chopped chives
    1. Place unpeeled potatoes in cold salt water and bring to a boil.
    2. Boil gently until potatoes are tender, but still firm.
    3. Do not overcook.
    4. Pour off the boiling water and allow potatoes to cool until easy to handle.
    5. (The drained, unpeeled Potatoes can also be placed in a refrigerator overnight).
    6. Peel cooled potatoes, slice, then place in a large bowl.
    7. Slowly sauté the bacon in a skillet until the bacon pieces are crisp and golden brown.
    8. Do not burn the bacon and do not drain the fat in the skillet.
    9. Remove the skillet from the heat and add the oil, vinegar, sugar, salt and pepper.
    10. Pour this mixture over the sliced potatoes in the bowl.
    11. Add the green onions and the chives.
    12. Gently toss the potatoes so all ingredients are evenly blended.
    13. Taste and adjust seasonings, if necessary

    Take it from an old deli man. That is an excellent recipe. Let it sit covered overnight in the refer for the flavor to get into the potatoes.

    If you like the mayo type potatoe salad just add mayo to this and you will have potatoe salad excelente.

    Both methods are what made the New york german delli salads so good.

    Remember what he said. NO BAKING POTATOES

    use redskins for the very best results.

    my grandmother just taught my wfe this recipe. It came from the old country with her. I was the first on my moms side to be born in the states. My grandmother was from hungry before the russians chased them out. But this is some good potato salad.
