I had mentioned to a couple people I was going to update my recipe. I start by roasting some garlic. I use to to do 6 large garlic heads. Man was that messy squeezing out all that garlic. Now I buy a 6 oz bag all ready peeled and roast in oil. I set oven temp to 250. Pour 1 cup oil into small baking dish. I been using a Sunflower Oil & Extra Virgin Olive Oil blend. Roast for 2 hours and let cool. I take a few garlic out for something else.
Time to roast Habanero's. I use my toaster oven set at 450 and shelf towards top. Take 6 large Habanero's and place on oil sprayed foil. Might throw and extra one on just in case. Give it about 5 minutes than turn. Another maybe 2 minutes. You want them blistered. Than wrap in the foil or covered dish to steam. Give them about 10 minutes.
Carefully peel the skin off and remove most of the seeds. Normally I can get the skin off fairly easy but if it does not want to come off dont worry about it. Peppers just need to be cooked to be able to blend. Now to a small bowl add the roasted garlic, habanero's, 1/2 cup of the oil the garlic roasted in and 1/2 cup honey. If you put the oil in first the honey will slide right out of the measuring cup. Use the rest of the oil for cooking. Makes great fried potatoes. That stuff is gold! Just keep it in the fridge. I use a stick blender and blend up really good. Use a rubber spatula to scrape blender off.
Mix that sauce into about 10 cups of pecans and spread onto two baking pans with silicon mats. You are going to want to use those mats.
This where is gets hairy and why I was wanting to update recipe. Before I got my newer oven I would use convection bake at 325. Bake 10 minutes, remove sprinkle with seasoning and stir in. Spread pecans out and sprinkle seasoning again. Switch top pan and bottom around and bake another 8 to 10 minutes. You want them fairly toasted. A little burnt actually taste good. Sprinkle with seasoning again, stir and season again. These can take a decent amount of seasoning. I use Kenny's for this but you want something that has some sugar in it. Let cool spread out on pan as best you can.
Now the timing has been way off with this new oven. Sometimes takes as much as 30 minutes at 350. The convection bake on my new oven only runs the fan for like 5 seconds a minute while my old one ran all the time. After the first 10 minutes of baking I figured if I ran oven on Air Fry the fan would stay on but lowest temp is 350. I did this and in 5 minutes was browning nice. I let go a few more minutes and they were done. You have to keep a close eye towards the end as they can burn fairly fast.
I have always have trouble with a red tint of food with my phones. I have tried changing the hood light bulb but decided to change again with a bigger bulb. Now tint is gone.
Let them cool, than using gloves use your hands to break them up. These are so good. I pretty much give most of them away to friends as I dont need all that honey. Cant make enough! Please feel free to ask questions.
