Fried Jumbo French Quails

Dan, thanks and these babies were tasty! Believe it or not but Costco sells standard size quails that they ship via frozen. They use D'Artagnan to full fill many of their online shipping meats so we looked them up and ordered these jumbo's directly from them..... we also ordered some other goodies from them, but they will be future posts so keeping those a secret for now...LOL..... Oh and they even have partial de-boned quail available so very easy to cook and EAT!

That blackberry juniper jam sounds very tasty!!!

That looks great! I just fried up some quail last week myself. Manchester Farms is local to SC and they sell seconds for $30 a box of 24 birds. It's a convenient stop for a friend of mine and he bought us 2 boxes each. It had been awhile since we cooked any and it was his wife's birthday so that was the menu...
 
Thst looks fantastic, I'm jealous... haven't had quial in some time. My boss brought back some pheasant from his trip. He was kind enough to share a few birds. I'll have to be cookin that up soon.

Funny thing is I have hunted lots of them but have never eaten one.

This was when I was younger and not into cooking as much as now so I let my dad take home my catch each time since he paid for the hunt.

CS, Outstanding cook on those birds, your plate looks divine!
Many thanks CM! I didn’t talk about the greens but these have a unique cooking process to add lots of flavor…..Ie the are blanched in 190-200 degree (not boiling) heavily seasoned (garlic, onion, S&P) water. It’s like poaching them vs blanching…..it gives them more time to soak in the flavors from the liquid……once al dente they are strained and then into a fry pain with a bit of butter and classic olive…. They are lightly seasoned and then on full high (18k btu) burner to flash the water off and baste them in the butter oil…..I make sure the floret part is up or in the side….this makes them packed full of flavor and texture!

You can see the little bit of water that gets steamed off and I use a large fry pan to allow the steam to move quickly without further cooking them……

Never had Quail, hunted and ate partridge ( or should say picked some up, they are not a very smart bird, lol )

Been so long since we have had quail around here…your post made my mouth water and gave me some “good ole days” reminiscing! Great job and congrats on the ride on the carousel👍💪🥃

On a side note…I have been working my farm hard to bring back turkey/quail habitat including trapping racoons, possums and skunk. Turkey are thick now! Still no quail…yet.

I have not hunted for years, no time really. And it was more exciting when I was younger.
Now Fishing that's another story. :emoji_fishing_pole_and_fish::emoji_fishing_pole_and_fish:

lol we definitely do more fishing than hunting as well, just love getting the boat out!!!! Although we do like to try to do some spring turkey hunting and deer and elk in the fall if we can….just gettin out and off the “main road” of life helps recharge things!

Thanks UE! They are tasty birds for sure and glad I could share the meal! Oh that’s very cool about your farm. Would love to have turkeys and a few other critters around the house! Hope the quail come in!

Yup, kill those egg eaters,and make plenty of brush piles, and the quail will find them. Besides being the best eating birds, they are also the stinkiest bird to clean.

……if you have ever cleaned a sage grouse you might change your mind……..🤮lol.
 
Our Mountain Quail stink bad when you clean them, they prob eat the same diet Sage Grouse eat. They smell worse than are resident Canada Geese.
