it was one of those "not as planned" days. mama found a stray tri-tip suck bagged in the garage freezer. It was part of one of those twin pack sales at the Latin grocery store. A little skimpy at just under 2lbs, but ok for two.
coated it good with my rib roast rub, which is basically SPOG with some mashed up roasted rosemary. In the fridge for an all day ride. hit the button on the P/B vertical and 1/2 loaded a tube with oak blend pellets. set it at 225 and micro trimmed the tri-tip. stuck two

Alarm went off at 119 and i went to light the B/S. ... <Sh%t> out of gas...plan B was grab a stainless pan and set it on 10 degrees above hell on stove.. had some finely diced garlic i threw in with 1/2 stick of butter to spoon. That's about it. on the board to rest then slice. Mama made us a baked tater and a pan of shrooms. for a scrawny little T/T it was rite good.
