I like to grill flank steak at medium-low heat, maybe 275-325.
Dry brined overnight, then a beef rub (no salt) before cooking over red oak.
Tender and juicy with good beefy flavor.
Served with chimichurri, sweet peppers & onions, Caesar salad.

Looks good Steve, Flank is a favorite of mine, but I priced one out yesterday and it was 40.00 for a single medium sized steak. Too expensive for my pay level.

Point for sure

Wish I had space for a rig like that. Steaks look awesome. Flanks are hit/or/miss down here. Usually sold two in package and pretty thin. Great for sloppy tacos though.

Wow that's a full plate and I'll take 2 please ! And as a fellow musician, I too miss the pickin' !

What used to be cheap cuts are now expensive cuts.

Beautiful meal! Every time I see a Santa Maria cook posted I feel like I need to add one to my arsenal
They are fun to cook on, but also burn up the wood.

PERFECTION!!!!! Man oh man I would do the dishes for a week for a plate of that!!!!
Good timing. Our dish washer just broke, and we are looking for a new one.

So nice! I want one of those SM set ups. I bet the aroma is delightful while cooking.
The aroma of meat roasting over an open fire.

You'll have to show it off when it's running.

Beautiful meal as usual. I miss the musical aspects of your posts though
Yea, I need to make some more of those music-cooking videos.

I would of liked leftovers for sandwiches, but left it for the wife to eat while I was out of town.

Nice job Steve! Love flank steaks!
Good flavor, but its the texture that I really like.

Heck yeah, fit for a King!
No kings here, but I ate some anyway.

Just like I would do it.
I hope that is a compliment.
Most people say hot and fast. But I like it medium-low heat when using open fire.

Wow that looks great but where's the song?
Yea, I know. Maybe soon. But it seems like so much work with the recording and all.

Just a nice picture and meal, I can smell that sizzling now.

Sights, smell, and sounds. Hard to beat. Well maybe the taste.

They put 2 in a pack so they can get rid of a not-so-good cut.

Man, nothing about greatness right there. And as always I love the view over the grill.
Jim
Thanks. Nice views is one of the pluses about living in the country.

Perfect !!
Love that tray for the veg .
It's a good size for 2 people.

Now don't take it all. And I'll try to work in some pickin' some time soon.
