Hi, I'm from Winnipeg, Manitoba, Canada . My family got me a Masterbuilt Sportsman Elite 40" propane smoker for Christmas and I have spent a lot of time on the site here looking at ideas and mods etc. and must say this forum is incredible ! Middle of the winter here and temps are 20-30 below 0 at times and I know from the large amount of BBQing I do I will need to take some extra steps. Picked up a old cast iron pan for wood chips (have chips and large chunks ), and a used gas stove grill plate to put under it and over the burner. Got a Taylor meat probe and a separate stove thermometer, high temp red silicone to run a seal around the inside edge of the door, tinfoil pans for water and had some old bbq lava rock to keep heat up and will put in them in original water tray. Drilled hole in side for brass fitting to run probe thru and am looking for a chimney for the top and vent for bottom. I picked up some foil bubble pack to insulate the outside but am afraid it might melt so and going to tale it back and use welding blanket I found at the local Princess Auto store. I will use the handles and some screws with washers to secure it to the smoker.

Built a 4 sided wind break from children's gate panel fencing with a tarp around it and am ready to season it tomorrow as long as the weather warms a little from the minus 41 with the windchill.
