I did my first smoke today, and I have to say it came out awesome !! I bought a Bradley original 4-rack electric smoker. I did some Walleye pike we caught a couple of weeks ago. I made the brine with the "float an egg" theory, which came out to 1 1/2 cups of salt to 1 gallon of water. I added 1/2 cup of brown sugar. Brined for 12 hours, rinsed 3 times. Smoked at 150 for 4 hours, finished at 180 for 1 hour. It came out great. Love the Bradley! Hope it holds up. I have read some bad reviews on it, but that goes for almost anything. Can't wait to do other things.
