Hey folks, I have been dabbling in the pork smoking for about 6-8 months now, doing butts 2-4 about 3 times a month. Each time has been a learning experience, but as we know, the butts are pretty forgiving, and nothing has been tossed out so far. In the summer I decided to try smoking some ribs. My next door neighbor has em all the time, but he has a "set it and forget it" electric box smoker. His ribs always turn out the same, and he doesn't have to stay up late, or add fuel every 45 min.
The first few times I tried the ribs, both spare ribs and loin ribs, they turned out dry, or too salty, or tough. As time went on(about 3 months ago) I began to learn more about the correct way to do them. Most of the info came from TV or on a few websites. The ribs began to turn out alot better, and the Butts were becoming just too darn good.
Then about a week or so ago, I stumbled on this site as a link from another barbeque site. I lurked for just a few days, but without registering, I couldn't get the Q -view. So I signed up, and I have been checking this place out daily since. What a great site, with some really hospitable, and informative folks . I always thought( and my family) that I was being obsessed with this "smoking addiction". After reading posts on here, I see that there are alot of you people who have the "sickness" alot worse than me

I just want to say thanks for all the info you all share so easily. I just did 3 racks of BB ribs to day with the 3-2-1 method, and a Fattie.
The ribs turned out the best I have ever done, and the family thought they were great, tender, and perfectly seasoned.They practically fell off the bone, and 2 of the racks broke in half when I was pulling them off the pit. The fatty was good also, but I think I overstuffed it, as it split open on one end, and cheese started to leak out. It only looked bad about 1/3 of the way, but still tasted excellent. I don't feel comfortable enough about my technique to post Q views yet, but when I get a little better( and you guys /gals are teaching me well) at this addiction, I try and send in some pics!
