well, thanks to all your help the first smoke on my certified preowned WSM went smoothly... i cant believe the heat control on this thing. it was a dream to use

.. i almost felt dirty for not doing as much to maintain the temp. any way here is the pics of the brisket, dutchs beans and the smoked dates

i dont have one YET,,,the firebrick trick helped me get about 6 hrs tho...i think this weeeks project will be that basket before next weekend
