first salmon smoke

    decided to give it a whirl.

    brine with salt,brown sugar, and little molassses for 4 hours.

    smoke at 200 with apple for 2 hours (thew some basic ABTs on, since I had some room!).

    Tasted great with a light smoke flavor, a little pesto on the side, although it really didn't need it.

    Looks great, if you have any left over, mix if with some cream cheese, celery and onions, it's makes a great fish spread.
