Hello all.  I started a 7.5 lb pork butt this morning at 0800.   Everything seems to be going good but now I have a question.  I am currently at the 11.5 hour mark and most of the butt is showing 192-195 but there is a couple spots near the bone that seem tough to the therm needle and are showing 182.  Is this normal? Am I doing something wrong?  It is an accurate thermometer which I now is not the best but seems accurate enough?  I will leave it on as long as necessary but I don't want to mess up and leave it on too long either.   Any thoughts?

I will post a full story to this thread when I get a little time.  Thanks!!
