First Pepperoni

  1. Did a batch of pepperoni yesterday- attached a few pics ,don't mind the gypo setup ( need to get a proper stuffer) , hot smoked it then finished in the oven as I can't get my smoker hot enough. Taste is pretty good -though not quite spicy enough for me , maybe some more cayenne next time. If anyone has a good recipe for a really spicy[​IMG] one let me know

    Nice looking pepperoni and there is absolutely nothing wrong with that stuffer; use whatever you have available and what works for you.

    What kind of smoker are you using? Possibly another member here has the same and may have some tips or tricks.....

    Give it a week before you tweek your recipe! Pepperonis taste better after they aged a bit. Ihvae a few recipes on my website. You can find a link to it on the booton of the page under recipes I think.
